J: Here's a first try at a Mexican caesar salad. People liked it so I don't think I'll fiddle with it, but these measurements are my best estimates, since I didn't measure too carefully. You're getting this recipe so soon because I wanted to write it all down before I forget since I already had one request. Cilantro Lime Caesar Salad Mix 1/4 cup fresh lime juice 2 cloves garlic, minced 1 tablespoon minced cilantro leaves 1 tablespoon worcestershire sauce 1/2 teaspoon dry mustard 1 tablespoon dijon mustard 1/2 teaspoon sugar 2 tablespoons grated parmesan cheese A few grinds of black pepper Add 1/2 cup olive oil and mix again. I use a mini-chopper/food-processor so I don't mince anything in advance. I just put it all in processor and blend away. Mix dressing with romaine lettuce, green onions, radishes, cucumbers, red bell peppers, chopped avocado, and pepitas (pumpkin seeds). Additional notes: 1/2 cup is too much olive oil. Use 3/8 cup instead. I forgot, I also added 1/4 teaspoon ground cumin and a pinch of cayenne pepper
