So not only were there enough people in town for Labor Day Sunday Dinner, there were a *lot* of people. I fell back on an old favorite which is fairly easy to prepare, and easy to prepare a lot of. I made veggie fajita burritos with Mexican rice and black beans. You have the fajita and rice recipes, but here is what I did for the beans. They turned out especially well. Saute 1 chopped onion and 1 chopped bell pepper in your pressure cooker. Add 2 pounds of rinsed and sorted but not soaked black beans. Add water to cover by 1 inch. Add one teaspoon each of garlic powder, ground red pepper, ground cumin, and ground coriander. Pressure cook for 18-25 minutes (your timing may vary, mine were done in 20). Quick release the pressure. Add 1 teaspoon of salt and mix. These were even better the second day.
